Wisconsin Cheese Manufacturer to Double Plant Capacity

Researched by Industrial Info Resources (Sugar Land, Texas)--Foremost Farms USA Cooperative (Baraboo,Wisconsin) is developing plans to boost cheese production at a facility in Appleton, Wisconsin. Foremost Farms is in the early stages of project planning that may ultimately lead to doubling the plant's production capacity. Currently, the plant has the capacity to store 2 million pounds of raw milk and receives 1.25 million pounds of milk every day through seven intake bays. The facility can also store up to 2.1 million pounds of finished cheese. High-temperature short-time (HTST) pasteurization is done at a rate of 79,000 pounds per hour. Products include mozzarella, provolone, dried permeate and whey protein concentrate in various forms, resulting in approximately 200 stock-keeping units (SKUs).

Initial plans may progress to the approval stage this fall, with the potential for construction next spring. The expanded facility may be fully operational by the end of 2010.

Foremost Farms is a dairy cooperative owned by about 2,300 dairy farmers in Illinois, Indiana, Iowa, Michigan, Minnesota, Ohio and Wisconsin. The Appleton facility was built in the 1940s and currently employs 85 workers.
