Family owned and operated Hilmar Cheese Company (Hilmar, California), has announced plans to build a $30 million cheese and whey processing plant in the Texas Panhandle town of Dalhart. In an effort to better serve customers in the Midwest and East Coast, and take advantage of the growing dairy industry in the region, Hilmar plans to construct a plant that will process five million pounds per day of locally produced milk into cheese and whey products.

Phase I of the project calls for the construction of a 300,000 square-foot production and warehouse building plus the installation of cheese processing and packaging equipment, as well as a cold storage area for finished product storage.

The company selected local contractor Western Builders of Amarillo, Incorporated (Amarillo, Texas) as the general contractor and the firm plans to begin mobilizing staff and construction machinery to the site, which is off Highway 385 North in Dalhart, to begin construction in March or April of 2006.

Completion of the plant is scheduled for mid-2007 and three additional phases are planned for the future, as additional capacity is required. Hilmar Cheese Company, Incorporated, a privately held corporation, was established in 1984. As the world's largest single-sire cheese manufacturer, Hilmar Cheese Company produces over one million pounds of cheese each day, with an emphasis on cheddar and Monterey jack. In addition, Hilmar Cheese Company is a large producer of whey protein and lactose powders.
